SWISS to serve inflight delights from the award-winning FAHR restaurant in Canton Aargau.
For the next three months, SWISS (Swiss International Air Lines) will be offering travelers, on its long-haul services from Switzerland, culinary delights from Canton Aargau. The new First and Business Class meals are the creation of starred chef Manuel Steigmeier, chef de cuisine at the FAHR restaurant in the Aargau village of Künten. For Premium Economy Class guests, this latest chapter in the ‘SWISS Taste of Switzerland’ inflight culinary program also brings selected Aargau specialties that include the canton’s famous ‘Rüeblikuchen’ carrot cake.
The FAHR restaurant is the proud holder of one Michelin star and 17 GaultMillau points. The restaurant’s kitchen is led by 29-year-old chef de cuisine Manuel Steigmeier, along with his wife Alexandra as the restaurant’s chef de service. Ideally located between the River Reuss and the picturesque Reusstal recreational area, the FAHR offers contemporary culinary fare that is known for its purist presentation and its extensive use of local and regional ingredients.

Veal cheeks, salmon trout and ‘Rüeblikuchen’
SWISS First travelers can enjoy a starter of char tatar with dill mayonnaise, cucumber and yogurt mousse, followed by a choice of main courses: braised veal cheeks with cremolata, cherry jus and mascarpone polenta or sautéed cod with chimichurri, creamy fregola sarda and roasted autumn vegetables. A chocolate financier provides a sweet conclusion to the First Class offer.
For SWISS’s Business Class guests, Manuel Steigmeier created a starter of marinated salmon trout with wild herb salad. The main course selection comprises a Beef Stroganov with spätzli, beetroot and sour cream or sautéed pikeperch with Riesling beurre blanc, lye bread dumpling and broccolini. The SWISS Business dessert consists of a chestnut cake with vanilla whipped cream, mandarin and calamansi gel.
SWISS’s new three-course Premium Economy Class meal has also been inspired by Canton Aargau’s cuisine. SWISS Premium Economy travelers will be able to enjoy Habsburger Ritterkäse and Aarenberger cheeses, along with the canton’s famed ‘Rüeblikuchen’ carrot cake with crème diplomate.
