Crustless Broccoli Cheddar and Shallot Quiche

A crustless quiche made with ingredients found in your refrigerator from fresh bought to leftovers. Easily adaptable to become of one of your favorite dishes to serve at home for your family or while entertaining. Can be made in advance too and frozen.

  • 4 cups broccoli, chopped, steamed fresh or frozen
  • 1 cup cheddar cheese, shredded
  • 5 eggs, large
  • 1/2 shallot, minced or small diced
  • 1 tsp olive oil
  • 2/3 cup milk, skim or 2%
  • 1/4 cup half and half cream
  • 1/2 tsp kosher salt
  • 1 tbsp Everything But The Bagel seasoning
  • 1/8 tsp black pepper
  • pinch nutmeg, grated


  • Preheat oven to 350 degrees
  • Coat pie pan or shallow baking dish (approx 9 inches) with non stick spray, oil or butter.
  • In glass bowl, steam chopped broccoli for 2-3 minutes with a 1/4 cup water. You want them slightly soft but not mushy.
  • Heat olive oil in fry pan. Saute shallots just till lightly browned. About 1- 2 minutes.
  • Beat eggs till mixed. Add salt, pepper, Everything seasoning, nutmeg and milk. Blend. Add broccoli and shallots. Mix. Fold in cheese.
  • Pour mixture into prepared pan. Bake 35-40 minutes till cooked through and lightly browned on top.
  • Slice and enjoy.
