Ordering a veggie burger at a restaurant is always a bit of a risk. You are never quite sure what you are going to get in the end. Will it be more beans than vegetables? Bland tasting?  Unappetizing in appearance? Have you ever seen an appetizing looking black bean burger???? Or what about buying them at your local grocery store? Do they really look like the picture on the box? Well, I have just tried a new brand, Veggie Patch, and their Mediterranean Patties. And all I can say is, Yum! They are made up of Mediterranean spices, spinach and chickpeas. Full of flavor and so tasty. And GMO free. Excellent.  (https://www.veggiepatch.com/products/veggie)

For me, having veggie burgers or patties available are the easiest way to make a meal that is healthy and quick. Today’s lunch was a Mediterranean Patty with colored peppers, hummus, red onions and flat bread. I have incorporated them in salads, on sandwich rolls, broken up in egg dishes and served with quinoa. So many uses that are really just dependent on your creativity.

I just happened to be at Costco recently and saw that they carry a “Costco-sized” package of them. If you have freezer space, I always like having items like this available for myself or for last minute get togethers. Can be appetizers or main dishes. It’s all up to you.
