Summertime and Sangria

Don’t you just love this time of year when the sun is out, grass is green, fresh ingredients are plentiful and everyone is enjoying the opportunity to spend time together outside? Well, living in the Midwest means I take advantage of any chance to do what I love to do: entertain friends with delicious dishes and even better, cocktails outside on the deck. Thanks to Beso Del Sol, I was able to introduce their new Sangria to my friends.

My goal was to make a dinner that had a fresh, healthy and summery twist to it but wouldn’t take the whole evening to make. So, I decided on tortilla encrusted tilapia, mango salsa, fruit infused brown rice, guacamole, salsa, tortilla chips and of course, a fruit filled glass of Beso Del Sol Sangria.   Here’s a little information about the Sangria. Beso Del Sol (Kissed by the Sun) is a Spanish Tempranillo wine blended with a selection of fruits to create a light and fruity sangria that offers just the right amount of sweetness. What is unique to me is that it comes in a 3 liter box. That actually means that I was able to have 4 bottles of wine  easily accessible with no spills, all in one box. Plus, it is the perfect size to bring to the beach, festival or friend’s house for that outdoor summer party as it is easy to carry. Have some fresh fruit chopped up to bring with you if you want that added touch in the glass. I like a mixed combination of fruits like apples, nectarines, blueberries and pineapple as I like the taste but also the visual appeal of all the colors from the different fruits.

 

 Inspiring Kitchen sangria Beso Del Sol

 

I am always looking for creative ways to “doll up” my dishes and love to add fruit based salsas to my menu. If you like mangos, you should try my mango salsa. It’s delicious on chips but also on chicken, fish, tacos and even mixed in salads.

Mango Salsa

2 -3 mangos, sliced to bite size pieces

1/2  shallot, diced

1 small jalapeno pepper, diced finely

Juice of half a lime

2 Tbls Parsley or Cilantro, chopped

Salt and pepper to taste
