Comfort Food: Slow Cooker Healthy Breakfast Recipe

Welcome to 2015! The new year always sparks the resolution to eat healthier, doesn’t it? With that in mind, I want to share an easy and delicious slow cooker steel cut oatmeal recipe to help you keep your New Year’s goal. Most people use slow cookers for making chili and soups but there are so many uses for this multi-tasking machine. Sauces, desserts and breakfast recipes are just a few ideas to consider. 

Slow Cooker Overnight Oatmeal with Apples and Cinnamon

The beauty of this recipe is it is adaptable to your tastes and what you have in your kitchen. I make it with steel cut oatmeal as it is hearty and gets creamy versus mushy. I love dried fruits as well as fresh so will add to my oatmeal along with nuts, flax and coconut. It’s also easy to adjust quantity and freeze a portion of it. Waking up on a freezing cold winter day to a hot breakfast that requires very little effort is an awesome way to start the day, isn’t it?! 

If you don’t already have a slow cooker or are looking for a larger model, I would recommend the All-Clad model shown below. This is a 6.5 quart capacity which is great for making recipes for everyday, parties or meals to be frozen in smaller portions. There are so many different recipes that can be made in a slow cooker that you will find tons of cookbooks to experiment with. Slow Cooker Steel Cut Oatmeal with Apples and Cinnamon

Ingredients
  1. 4 apples - peeled and cut into 1/2 inch pieces
  2. 3 cups fat free milk (or milk of choice)
  3. 3 cups water
  4. 2 cups uncooked steel cut oatmeal
  5. 1/4 cup brown sugar
  6. 1 teaspoon cinnamon
  7. 1/4 teaspoon salt
  8. 3 tablespoons butter (optional)
Instructions
  1. Coat inside of slow cooker with butter or cooking spray.
  2. Add ingredients to slow cooker.
  3. Stir well.
  4. Cook on low for 7 hours.
Notes
  1. Topping options include: nuts, fruit, coconut, or maple syrup
  2. Freezes well.
  3. This recipe is made in a 6 quart slow cooker. Can easily be adjusted for smaller machines.
