Celebrating National Cheese Lover's Day with Cabot Cheese

Did you know today is National Cheese Lover’s Day? In honor of this special day, we are going to celebrate with two recipes using the delicious cheese made by Cabot. The more you learn about this brand, the more you understand the commitment to high quality products that the 1200 Dairy Farm Families in NY and New England who own Cabot, promise their customers.

They are a cooperative owned and operated by their members, dairy farmers and families throughout New England and Upstate New York. Everyone has their favorite recipes when it comes to incorporating cheese into their dishes. What I love about Cabot cheeses is how good these are fresh out of the package. Each has such a distinct flavor and creaminess pairing well with wines, fruits, crackers and meats. I chose two of their Farmers’ Legacy Collection cheeses to try first along with their Extra Sharp Cheddar. The Farmer’s Legacy Collection are European inspired cheddars each with their own distinctive flavor.

Cabot White Oak Cheddar – has an oaky and buttery flavor

Cabot Alpine Cheddar – has a nutty taste like Parmesan and creamy texture like Swiss

 

Inspiring Kitchen Cabot Cheese

Everyone makes grilled cheese sandwiches, right? Because I wanted to bring out the flavors that Cabot imparts in their cheeses, I am sharing two different recipes that I hope you find as delicious as I do.

 

Cabot Alpine Cheddar

Nutty and creamy cheese paired with sauted sweet shallots and Dijon Mustard Balsamic Vinegar spread.  

Inspiring Kitchen Cabot Cheese

Ingredients:

2 slices whole wheat bread

Cabot Alpine Cheddar Cheese – sliced

Maille Honey Dijon Mustard with Balsamic Vinegar

Inspiring Kitchen Cabot Cheese Maille Mustard Balsamic

1 Shallot – sliced thinly

1 tsp olive oil

 

Directions:

In grill pan (or frying pan), heat olive oil, sauté sliced shallots till golden. Remove from pan.

Add bread to oil from shallots.

Add slices of cheese to one slice.

On second slice of bread, spread Mustard in thick layer (or as much as you like)

Combine bread slices.

 

Cabot White Oak Cheddar

A combination of flavors from creamy buttery cheese, sweet honey and tart cherries on toasted bread. 

Inspiring Kitchen Cabot Cheese

Ingredients:

2 slices whole wheat bread

Cabot White Oak Cheddar – sliced

4-5 cherries – sliced in 3 pieces

Honey

Butter

 

Directions:

In grill pan (or frying pan), melt butter and add both slices of bread. Grill till golden.

Add slices of cheese to one slice. Remove second slice of toasted bread.

On second slice of bread, drizzle honey.

Add sliced cherries.

Combine bread slices.

 

Note:

Both recipes would make good appetizers if sliced in squares or triangles.
