Celebrating Labor Day Weekend with Very Berry Iced Tea Popsicles

As Labor Day approaches, it may cross your mind that summery cold drinks are no longer as welcome as hot beverages. But that is so not true! The calendar may say one thing but the warm weather tells us another. If you like tea as much as I do, then you are going to enjoy these popsicles with a more unique flavor profile. 

TetleyVery Berry Ice Tea Popsicles

You may be familiar with Tetley teas since they have been around for more than 170 years. Originating in England, the company grows tea in over 35 different countries around the world.  They have an Iced Tea Blend that makes not only a refreshing glass of ice tea but also works beautifully in these Very Berry Iced Tea Popsicles. 

This recipe is a real mix of fresh summer fruits like raspberries and blueberries and the juiciest of lemons. Everyone knows of that famous golfer (Arnold Palmer) and his namesake iced tea and lemonade blend. Only now, we are boosting it with fruit. The popsicles come together very quickly which is a bonus on a hot day when having a cold treat is the goal.

Very Berry Iced Tea Popsicles
Serves 12
Refreshing fruit filled iced tea popsicles to cool you off in the warm months and refresh you anytime of year.

Ingredients
  1. 1 Tetley Iced Tea bag
  2. 4 cups filtered water
  3. 1/3 cup fresh lemon juice, divided
  4. 1 cup lemon lime soda
  5. 1/3 cup raspberries
  6. 1/3 cup blueberries
  7. 1/3 cup granulated sugar
Instructions
  1. Steep one Tetley Iced Tea bag in boiling filtered water for 3-5 minutes
  2. Puree raspberries and 3 tablespoons lemon juice in blender until smooth
  3. Strain puree into a small bowl
  4. Combine tea with remaining lemon juice, sugar and lemon lime soda and stir until sugar dissolves
  5. Mix in puree and add blueberries; stir until well combined
  6. Pour mixture into popsicle molds and freeze for at least 5 hours
