Cooking on Green Pan Ceramic Non-Stick Cookware

Have you heard about this kind of cookware with non-stick capabilities using a ceramic surface instead of the black, non-stick materials we are used to seeing? Since I was intent on learning more about this cookware, I  knew I had the perfect opportunity to be educated on the subject while at the 2014 International Housewares Show.  While roaming around the show, I learned about a company called The Original Green Pan or Green Pan.

The Original Green Pan has been in business making ceramic cookware since 2007. They have a variety of cookware styles along with different metal exteriors and handles. They were quite helpful in explaining how the surface works and for what types of foods. The name of their non-stick ceramic surface is Thermolon. It’s intended to allow you to be able to sear and even fry your food in their cookware. Not typical for non-stick surfaces. Usually you think of searing and frying in stainless or cast iron pans. This cookware also handles temperatures up to 450 degrees allowing you to put the pan in the oven without concern of the surface peeling off or any toxic fumes to form.

I found it quite useful to learn that they had created 3 different frying pans that had surfaces designated for meat and poultry, veggies and fish and eggs and pancakes. When you cooked meats for example, the frying pan had an elevated design to allow for healthier cooking. Same idea as a grill pan. But this is ceramic non-stick.

So, I decided to make two different types of meals to see how the ceramic worked from a non-stick perspective. Using the flat surface multi layer stainless steel pan, I made french toast looking to use as little butter in the pan as possible but still wanting some nice browning and crunch on the bread in the end. The pan heated up beautifully, very even which was reflected in how the bread browned. There was no stick at all and flipping was easy. And the best part was how little (seriously, very little!) butter I used in the pan.

I then decided to try the “I Love Meat and Poultry” pan which had the grill type elevations in the pan. I chopped a few small colored peppers and marinated a chicken breast in olive oil and seasonings. The manufacturer suggests cooking on low to medium heat as the Thermolon distributes heat throughout the pan without needing to crank up the heat. So, I did as directed. The veggies stayed crisp but seared slightly and the chicken cooked beautifully and very evenly as you can see in the picture. Turning the chicken was a piece of cake. No mess. No stickiness.

And now, the final test: how well do the pans clean up. Beautifully! No sticky residue at all. Another thing to note is how light the pans felt compared to the what I am familiar with. That was a bonus.

The points to be aware of are that you should not use oil misters or non-stick sprays on this or any non stick cookware as it leaves a sticky residue that will affect the foods release from the pan and the ease of cleaning. You also want to use wood or silicone tools in this cookware to protect the surface.

So where can you find my new find? Many of the national retailers you are familiar with carry the brand: Macy’s, Bed Bath and Beyond, Target, Kohl’s are some examples. The most convenient is at Amazon. Prices are very reasonable for this ceramic pan.

    These pans are amazing! I love that it’s non-stick which means you don’t have to use as much butter or oil for your recipes. It’s a great way to start eating less fatty food!

    I like my pans and pots easy to clean and light. Those that would equally distribute the fire from below so the food would be evenly cooked. Those pans look promising and are good investment.

    This is something that’s really convenient to have in the kitchen. For me, it’s going to make cooking and cleaning up ( usually the part that I hate ) easier. Lol. This one got me at non-stick & easy to clean.

    Quick question as I am a bit confused, do you preheat the pan with oil or without? And how long do u let it preheat for (with or without oil) for your chicken dish? After preheating do you reduce the heat or leave it as is? thanks a bunch!!

      Sharon, no need to add oil to the pan. What I do is use a marinade with a little oil or spritz a little oil on the chicken if I am just using seasonings. That’s all it needs. I would preheat the pan on low heat, empty, for a few minutes. If you have a powerful cooktop, it may heat up faster but that is the average I would suggest. Then add the chicken and turn up the heat to medium/medium high. Hope that helps!

        thanks a bunch for the reply. Do you find that chicken in general takes longer than expected time to cook in the greenpan ceramic non stick? I fried some chicken breast yesterday and despite frying for like 25 minutes ( thawed and room temp and also preheated pan and fried on medium heat) they still seemed a bite odd kind of like white inside but tasted undone. Fried chicken burgers aswell today as per instructions to pan fry on medium heat 4-5 minutes each side, and hubby said the chicken burger didnt taste cooked so i then had to put it back in the pan for another 3-4 minutes each side.🤷🏼‍♀️ wondering if I’m doing something wrong or just that i need to cook it longer in the ceramic pan. Can I use medium to high heat on these pans? the instructions of the pan and online ceramic say low to medium heat cooking! but finding the medium heat to not work for my chicken! ahhh
